Pasta courgettes, anchovies and beer

today britboy left me alone and went to play squash with his sporty friend. i get really lazy when i have to cook for myself so i did some homework until late and then rummaged in the kitchen and gather a few ingredients: a half pack of pasta (god knows how long it's been open), a courgette, anchovy fillets in a tin (hidden at the bottom of the cupboard) and a drop of beer (britboy must have forgotten about it, doesn't often happen that a bottle of beer is left unfinished!).


here is a quick and easy recipe for a pasta dish with some random ingredients that work really well together!

Make 4

ingredients

500g wholemeal penne

2 courgettes

5 anchovy fillets in olive oil

1 garlic clove

1 small onion

3 tbsp olive oil

200ml lager beer (i used moretti)

salt

parsley

instructions

1. warm up the olive oil in a non-stick frying pan. chop garlic and onion and add to the pan, cook at medium heat for a few minutes.

2. dry off the oil from the anchovies, chop them and add to the pan with the sliced courgettes.

3. when the onion is golden add the beer and let it evaporate

4. in the meantime cook the pasta in boiled water with a little salt.

5. when the pasta is cooked “al dente”, drain it and add it to the pan with the sauce. gently stir until the pasta is coated with the condiments. add some parsley and serve.

ingredienti per 4 persone

500g penne integrali

2 zucchine

5 filetti di acciuga in olio d’oliva

1 spicchio d’aglio

1 cipolla piccola

3 cucchiai olio d’oliva

200ml birra moretti o simile

sale

un ciuffo di prezzemolo

istruzioni

1. riscaldate l’olio d’oliva in una padella antiaderente. tagliate finemente l’aglio e la cipolla, versateli nella padella e fateli rosolare a fuoco medio per qualche minuto.

2. aggiungete le zucchine tagliate a rondelle e le acciughe tritate e sgocciolate dell’olio di conservazione. Fate sciogliere a fuoco dolce, mescolando di tanto in tanto.

3. quando i filetti saranno sciolti e la cipolla leggermente appassita, aggiungete la birra e fatela evaporare.

4. nel frattempo portate a bollire dell’acqua in un tegame e fate cuocere la pasta con un po’ di sale.

5. quando la pasta sarà al dente, scolatela e versatela nella padella del condimento. saltatela velocemente mescolando e aggiungete il prezzemolo tritato.
